Radishes are not very interesting to me. If they are on my plate, I will usually move them to the side. However, I recently tried this simple radish cucumber salad as a topping to tacos and instantly loved it. It added the perfect tangy, fresh, and slightly sweet crunch! You can use this salad as a side dish to grilled chicken or fish or even as a burger topping. Enjoy! 


6 radishes

2 small pickling cucumbers

2 tablespoons white wine vinegar

2 teaspoons sugar



Optional: fresh dill or parsley


1. Wash radishes and cucumbers and slice thinly.

2. Add radishes and cucumbers to a medium sized bowl with vinegar, sugar, salt, and pepper. Mix to coat.

3. Allow to sit for at least ten minutes. Stir. Allow to sit for at least ten more minutes. Overnight is best for full flavor.

4. Add fresh dill or parsley on top before serving if desired.
